While trying to get back on the healthy eating routine, I came across a recipe for Chimichurri meatballs. I adapted this recipe because the original included pork instead of lamb (which you can choose to use pork if you like) and I chose to bake the meatballs instead of frying them.

These meatballs came out so delicious and they are packed with vegetables and herbs.




This makes a perfect weeknight meal with an easy cleanup. While the meatballs are baking, you can quickly rinse everything and throw it in the dishwasher.
