Pan Seared Halibut with Herbes de Provence

This is such a quick and easy recipe that takes minutes to prepare and eat. It’s perfect for a week night meal and also if you are watching your weight 🙂

Ingredients:

  • 2 Halibut fillets – 6 oz. each and about 1 inch thick
  • 1 TBSP Grapeseed Oil or Olive Oil
  • 2 tsp. – Herbs de Provence
  • Salt and Pepper to taste
  • Lemon wedges for serving

Directions:

Pat the halibut fillets dry with a paper towel.

Sprinkle the Herbs de Provence (I slightly crushed the herbs), salt and pepper evenly over the top of the fillets and press firmly into the flesh.

Heat a large, heavy bottom skillet or cast iron pan over high heat until very hot… about 3 to 4 minutes. Add 1 TBSP grapeseed oil or olive oil, then add the fillets (skin side down) and sear for 4 – 5 minutes depending on the thickness of your fish. Carefully turn the fillets over sear for 2 – 3 minutes. Remove the pan when fish starts to look flakey.

Serve immediately with lemon wedges.
