Now that it’s the new year, we are back on the health kick again. With both of us having busy schedules lately, I’ve been looking for quick, easy and healthy meals to make during the week. This was an instant hit in our house and will be on our bi-weekly rotation.
Ingredients
- 16oz Green Beans – ends trimmed and cut in half
- 1 Large head of Broccoli – cut into florets
- 2 Bell Peppers – roughly chopped (I used red and yellow)
- 1 package Chicken Italian Sausage (4 links) – cut into thick rounds
- 6 Tbsp Olive Oil
- 1/4 tsp Red Pepper Flakes
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1 Tbsp Dried Oregano
- 1 Tbsp Dried Parsley
- 1/4 tsp Salt
- 1/4 tsp Freshly Ground Pepper
- Serve with: Freshly Grated Parmesan Cheese

Preheat the oven to 400 degrees F.

Line a large sheet pan with foil or parchment paper.

Place all the chopped veggies and sausage in a large bowl. Pour olive oil and seasonings on top and mix to evenly coat.
- Pour veggies and sausage onto prepared baking sheet.

Bake for 15 minutes, remove from the oven and stir all the veggies and sausage around. Return to the oven and bake for another 15 minutes.

Before serving, sprinkle freshly grated Parmesan cheese over the veggies and sausage as soon as they come out of the oven.
