Ingredients:
- 1 lbs boneless, skinless chicken breasts – sliced
- 1 Tbsp minced garlic
- 1 Tbsp ground cumin
- 1/2 Tbsp chili powder
- 1 Tbsp dried basil
- 1 Tbps Thai curry powder
- 1/2 cup lite coconut milk
- 1.5 Tbsp brown sugar
- 1 Tbsp lime juice
Directions:
- Cut the chicken breasts lengthwise into even strips, about an inch wide.
- Whisk together all marinade ingredients. Place chicken in a Ziploc bag with the marinade, and refrigerate 12 hr – 24 hrs. (do not marinate for more than 24 hours because the lime will start to “cook” the chicken).
- Heat a stove-top grill pan over medium high heat and lightly spray with olive oil.
- Remove the chicken from the marinade with tongs. And place on stove-top grill pan.
- Grill the chicken until lightly charred and cooked through, about 4-5 minutes on each side. Transfer the chicken to a platter and serve with the peanut sauce.
