Salmon Burgers with Lemon Herbed Aioli

We are still on the Paleo/ Cleaning Eating trend which I have come to realize is a lifestyle change vs. a fad diet. The best part for me is finding new and exciting recipes and making them my own. For instance, look at those salmon burgers. They are amazing!!!!

Ingredients:

Salmon Burgers
  • 2 –  6oz. cans Wild Alaskan Salmon
  • 1 Medium Egg
  • 2 Tbsp Arrowroot Flour
  • 1/4 cup White Onion – minced or diced small
  • Juice from 1 Small Lemon
  • 2 Tbsp Fresh Parsley – minced
  • 1 Tbsp Fresh Dill – minced
  • 1 Large Garlic Clove – minced
  • 1 Tbsp Lemon Zest from small lemon
  • 1/2 tsp Salt
  • Fresh Cracked Black Pepper to taste
  • 1 Tbsp Olive Oil for cooking
Lemon Herb Aioli
  • 1/2 cup No sugar added Mayonnaise ( I buy Spectrum’s brand)
  • 3 Tbsp Fresh Parsley – roughly chopped
  • 1 Tbsp Fresh Dill – roughly chopped
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp No Sugar Added Dijon Mustard
  • 1 Tbsp Water
  • 1 Lemon –  zested
  • 1 Clove Garlic
  • 1/2 tsp Salt
  • Fresh Cracker Black Pepper to taste

DIRECTIONS:

Lemon Herbed Aioli
  1. Begin with the aioli and set aside when done. Combine all aioli ingredients in a blender or food processor. Blend until smooth.
Salmon Burgers
  1. Combine all the ingredients for the salmon burgers in a medium size bowl. Mash everything together with a large fork.
  2. Heat a large skillet over medium heat on the stove. Drizzle the pan with 1 tablespoon olive oil.
  3. When hot, separate the salmon burger mix into four burgers and shape into patties. Gently place the burgers onto the skillet and cook for 3 – 4 minutes. Carefully flip and cook an additional 3 – 4 minutes until golden brown.
