We are still on the Paleo/ Cleaning Eating trend which I have come to realize is a lifestyle change vs. a fad diet. The best part for me is finding new and exciting recipes and making them my own. For instance, look at those salmon burgers. They are amazing!!!!
Ingredients:
Salmon Burgers
- 2 – 6oz. cans Wild Alaskan Salmon
- 1 Medium Egg
- 2 Tbsp Arrowroot Flour
- 1/4 cup White Onion – minced or diced small
- Juice from 1 Small Lemon
- 2 Tbsp Fresh Parsley – minced
- 1 Tbsp Fresh Dill – minced
- 1 Large Garlic Clove – minced
- 1 Tbsp Lemon Zest from small lemon
- 1/2 tsp Salt
- Fresh Cracked Black Pepper to taste
- 1 Tbsp Olive Oil for cooking
Lemon Herb Aioli
- 1/2 cup No sugar added Mayonnaise ( I buy Spectrum’s brand)
- 3 Tbsp Fresh Parsley – roughly chopped
- 1 Tbsp Fresh Dill – roughly chopped
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp No Sugar Added Dijon Mustard
- 1 Tbsp Water
- 1 Lemon – zested
- 1 Clove Garlic
- 1/2 tsp Salt
- Fresh Cracker Black Pepper to taste
DIRECTIONS:
Lemon Herbed Aioli

Begin with the aioli and set aside when done. Combine all aioli ingredients in a blender or food processor. Blend until smooth.
Salmon Burgers

Combine all the ingredients for the salmon burgers in a medium size bowl. Mash everything together with a large fork.

Heat a large skillet over medium heat on the stove. Drizzle the pan with 1 tablespoon olive oil.

When hot, separate the salmon burger mix into four burgers and shape into patties. Gently place the burgers onto the skillet and cook for 3 – 4 minutes. Carefully flip and cook an additional 3 – 4 minutes until golden brown.Enjoy!
