Ingredients:
- 1 lbs Jumbo Shrimp
- 2 Tbsp Olive Oil
- 2 Garlic Cloves – minced
- 2 Tbsp Lemon Juice
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Smoked Paprika
- 1/4 tsp Dried Oregano
- Salt and Pepper to Taste
- 2 Zucchini – spiralized
Directions:
- In a bowl, combine the spices and season to taste.
- In another bowl, combine the olive oil, lemon juice, garlic and the cajun spices.
- Add the shrimp to the cajun mixture, and toss until well coated.
- Heat a large skillet over medium high heat. Add some olive oil to the skillet.
- When hot, place the shrimp on the skillet and cook for 3 minutes. Flip the shrimp and cook the other side for another 3 minutes. Remove shrimp onto a plate.
- Add spiraled zucchini and cook for 3 – 4 minutes.
- Toss in shrimp and mix.
- Serve immediately.
