Since being in New Orleans, I’ve become slightly obsessed with Cajun and Creole recipes. Food in the South tends to not be on the healthy side so I have “healthified” these recipes without losing any of the flavor.
This recipe is done from start to finish in less than 30 minutes which makes it the perfect weeknight meal.
Ingredients:
- 3/4 lbs salmon fillet, skin on, boneless (this is for 2 people)
- 1 tsp cajun or creole seasoning
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- pinch of cayenne pepper
- 1/2 lemon, zested, juiced – save the other half to squeeze when finished
- 1 TBSP Italian parsley, minced
- 1 TBSP extra virgin olive oil
Directions:
- Preheat oven to 400 degrees.
- Mix seasoning together.
- Pat dry Salmon.
- Place salmon on oven proof pan, coat both sides with olive oil.
- Place salmon skin side down.
- Season the top of the salmon with seasoning blend.
- Top with lemon juice and zest from half the lemon.
- Bake at 400 for 10-12 minutes.
- Remove from oven, top with parsley and serve with the extra half lemon.
