I used my new spiralizer to make the “zoodles”. You can find one here: Vegetable Spiralizer
INGREDIENTS
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 lbs jumbo shrimp, shelled and deveined. I also took the tails off
- 3 cloves garlic, minced
- 1 pinch red pepper flakes
- 1/4 cup white wine
- Juice from 1 lemon
- 3 medium zucchini, cut into “noodles”
- salt and pepper to taste
- Zest from 1 lemon
- 1 Tbsp parsley, chopped
DIRECTIONS
- Heat oil and melt the butter in a large sauté pan over medium-high heat until frothing, add the shrimp, cook for 2 minutes, flip. Cook the other side for an additional 2 minutes and remove shrimp to a plate.
- Add the garlic and red pepper flakes and cook for 30 seconds to 1 minute. Just until fragrant. Be careful as to not burn the garlic.
- Add the white wine and lemon juice to the pan, deglaze it and simmer for 2 minutes.
- Add the zucchini noodles and cook until just tender, about 2 minutes. Season with salt and pepper.
- Add the shrimp, lemon zest and parsley to the pan. Toss everything together and remove from heat.
- Enjoy immediately! You can also add a little parmesan cheese 🙂
