Creamy Parmesan Polenta

Ingredients:
  • 4 cups water or chicken broth
  • 1 cup polenta or coarse ground cornmeal
  • ½ cup freshly shredded Parmesan cheese
  • 1 tablespoon butter
  • salt and pepper to taste
Directions:
  1. In a medium to large saucepan, bring water or chicken broth to a boil.
  2. While whisking constantly, slowly pour the polenta into the water/broth a little at a time. Be sure not to add too much of the Polenta too soon or this will create lumps.
  3. Reduce the heat to medium-low and simmer the polenta for 20 minutes, stirring frequently. Polenta tends to pop so keep an eye on it.
  4. Stir in ½ cup Parmesan and butter. Add salt and pepper to taste.
