This was a happy accident. Apparently I didn’t know the difference between a “Orange” Sweet Potato (YAM!!!!) and a regular Sweet Potato (White!!!!).
So here is my happy accident…
First, you make the sweet potatoes. I just learned that sweet potatoes come in a variety of colors but when buying actual sweet potatoes… they are white.
Ingredients:
- 6-7 “Sweet Potatoes”
- 1/4 milk
- 1-2 tbls Honey
- Salt and Pepper to taste
- 4 Yams “Traditional Orange Thanksgiving Potatoes”
- 4 tbsp butter(cut into pieces)
- 1/4 cup brown sugar
Directions:
- Preheat oven to 400F
- Wash and scrub Potatoes and Yams. Pat Dry.
- Place on oven sheet and poke several holes with fork to prevent them from exploding.
- Bake for 1 hour. Remove from oven and let rest for 10 minutes.
- Scoop out sweet potatoes and place in food processor (in batches). Add some milk and puree until smooth. Remove and place in a bowl. Repeat process until nice and creamy.
- Stir in honey with salt and pepper to taste and set aside.
- Add butter to the bottom of the second bowl. Scoop out yams on top of butter and mash and mix until smooth. Stir in brown sugar.
- Begin to layer in a casserole dish. First the Sweet Potatoes, then the yams then the sweet potatoes and top with yams.
- If you make this the night before or during the morning, just place in the oven to reheat at 350F for 20 minutes.
