My Favorite Sausage Marinara

This is my ultimate favorite meat sauce that I make. The first time this turned out perfect…. by perfect, I mean no adjusting of ingredients… was recently so I thought I would share. When my husband took a bite of the sauce in the pot… his eyes lit up and he just smiled at me. That’s how I knew…. this is my favorite sauce!

Ingredients:

  1. 4 Sweet Italian Turkey Sausages – casings removed
  2. 2 Hot Turkey Sausages – casings removed
  3. 1 Large Onion – diced
  4. 2 Large Carrots – grated
  5. 4 Large Garlic Cloves – minced
  6. 1 – 28oz Can Crushed Tomatoes
  7. 1 – 14.5oz Can Fire Roasted Diced Tomatoes
  8. 1 – 8oz Can Tomato Sauce
  9. 1 Tbsp Sundried Tomato Paste
  10. 1 Tbsp Dried Italian Herbs
  11. 1 Tbsp Dried Oregano
  12. 2 Bay Leaves
  13. 2 Tbsp Olive Oil
  14. Salt and Pepper to Taste

Directions:

  1. In a large dutch oven or sauce pan over medium high heat, add Olive Oil and heat until hot.
  2. Add onions and carrots and sauté until onions are translucent.
  3. Add garlic and sauté for 30 seconds.
  4. Add Sundried Tomato Paste and cook until it turns a rusty red/brown color – about 2 minutes.
  5. Move mixture to the sides of the pot so the center is mostly cleared. Add a little olive oil to the center and place sausage in.
  6. Break up sausage with a meat pounder and cook until browned. When sausage is cooked, mix vegetables and meat together.
  7. Stir in Tomato Sauce, Diced Tomatoes and Tomato sauce.
  8. Add dried Italian herbs and bay leaves.
  9. Salt and Pepper to taste.
  10. Bring to a boil and simmer for at least 30 minutes. The longer it simmers, the better it tastes.
